La Mar cevicheria is the Buenos Aires outpost of Peruvian chef Gastón Acurio — considered the most influential Latin American chef in the world. La Mar is a global cevichería chain with locations in Lima, Miami, San Francisco, Santiago and Bogotá, and the Buenos Aires version quickly became one of the most celebrated in the world.
The La Mar cevicheria proposition pays tribute to Peruvian beach cevicherías: ceviche with ají limo cultivated by local producers, Patagonian prawn tiradito chupe, anticuchos and causa in tasting portions. The cocktail bar designed by Julián Díaz (878, Florería Atlántico) recreates Peruvian classics — chilcano, pisco sour — with Buenos Aires twists like the Palermo Sour with Campari.
