THE PARRILLA AS AN ART FORM
Don Julio works with grass-fed Aberdeen Angus and Hereford cattle, dry-aged in a climate-controlled chamber for at least 21 days. Cooking is done over white quebracho wood fire, on a V-shaped grill that prevents fat from dripping onto the embers. The result is a premium meat experience that few restaurants in the world can match.
